
Fried Rice makes for a filling and nutrient-rich dinner option that can be easily made at home. This one-pot dish is rich in protein, vitamins and minerals and can be made in a jiffy. 1 cup rice, 5 tbsp desi ghee, 1 green capsicum, 1 carrot, 1 yellow capsicum, 1 red capsicum, 250 gms paneer, salt to taste, 1 onion, 1 tsp black pepper, 2 tbsp soy sauce, 2 tbsp white vinegar, 2 tbsp spring onion, 2 green chillies, 4-6 garlic cloves, 1 tsp ginger, 1/2 cup steamed corn, and 2 tbsp coriander leaves.

Wash and pressure cook rice with 1.5 cups of water. Let the pressure release naturally. Spread it on a greased base and let the rice cool down.

In the meantime, heat ghee in a wok.

Add garlic, ginger, and green chillies. Let them splutter and then add onions. Saute for 1 minute.

Next, add all the chopped veggies and steamed corn and cook them for 3-4 minutes. Make sure they are crunchy and don't turn mushy.

Add salt, pepper, soy sauce, vinegar, and diced paneer. Stir gently.

Add the cooked rice, mix all the ingredients well. Cook for 2-4 minutes.

Garnish with spring onion and coriander leaves. Serve it hot!
