Ingredients:4-6 cups spring greens, 1 cup asparagus tips, 1 cup fresh English peas, 1 watermelon radish, 1/2 avocado, 1/2 cup feta cheese
For the dressing: 1/4 cup extra virgin olive oil, 3 tbsp fresh lemon juice, 1 tbsp fresh mint, 1 clove garlic, 1/2 tsp salt, 1/4 tsp pepper
Method: Wash and chop all the veggies and fruits. Take a salad mixing bowl, add all the ingredients and mix well. In a small bowl, add all the dressing ingredients and whisk well. Pour the dressing over the salad and toss until fully incorporated. Top with grilled chicken or an additional avocado if desired. Serve immediately and enjoy!
