This summer, I'm committing to posting on LinkedIn once a week. Welcome to Week Nine of my ongoing series: #FourteenWeeksOfOperations. This week's challenge? Finding room for 40 more campers in our dining hall. At first glance, it felt like a space problem. Forty more campers meant forty more seats... right? Not exactly. Instead of asking, "How do we fit more people?" I started asking, "What spaces are we underutilizing?" I looked at how campers entered the dining hall, where lines backed up, when tables became available, and where traffic naturally slowed down. I realized the problem wasn't fitting tables - it was getting campers and staff through the buffet lines and into their seats (and refills!), all while having room for 40 more seats. Inspired by our upcoming waterpark field trip, we created lines that snake, assigned new entrances to the dining hall- utlizing every door and entrance- and created new paths from buffet to table that optimized flow and walking paths. We also split our buffets from 3 big groups into 6 mini lines. The result? Wait time for food was cut down by 50% (yes, I counted), and the game of bumper cars in the dining hall has been almost eliminated, It was never about capacity. It was all about flow. I assumed we need more—more space, more people, more resources—when what I really needed was to re-evaluate the systems in place. This week's lesson wasn't about making the dining hall bigger. It was about making it work smarter. #FourteenWeeksOfOperations

Last week, we talked about the waiting game with our delivery partners and the reality of losing revenue while onboarding. We asked ourselves: "What can we do while we wait?" This week, we turned that question into action. 🛠️ While the paperwork and onboarding continue, we decided to invest our time into the one thing we can always control: The physical environment of our restaurant. As you can see from the changes we made this week, hospitality isn’t just about the food on the plate—it’s about the feeling in the room. Here is what we tackled: ✅ The Walls: We repaired texture damage and added a new focal point on our accent wall using sunburst mirrors to reflect light and create a sense of space. ✅ The Atmosphere: We installed new handcrafted art and modern metal art, merging folk art with a modern aesthetic to give our dining area more character. ✅ Safety & Compliance: We moved and updated our fire emergency signs to ensure every corner of the house meets German safety standards. ✅ The Exterior: We planted fresh mint (imagine the aroma!) and vibrant red geraniums on our terrace. In hospitality, we don't just serve food—we nurture an environment where guests can breathe, relax, and belong. Small fixes, big impact. Did our customers notice? Absolutely. We had several guests comment on the "fresh feel" and "cozy terrace" this week. The lesson: When one part of the business pauses, the other parts must move forward. By focusing on visible improvements, we aren't just improving our own morale—we are building an experience that will keep people coming back, long after the delivery apps are fully activated. The delivery platforms will come online. But the memories created in a beautiful space? That’s what turns a first-time guest into a regular. Here’s to Week 4. We talk to restaurant and hotel operators every summer who tell us they’ve been meaning to address their patio situation for two years. Two summers of watching empty tables at peak hours. Two summers of customers coming inside after ten minutes because there’s no shade. Two summers of lost covers. Think about what an empty 20-top patio costs per hour at a $45 average check during lunch and dinner. Multiply that by every sunny afternoon from May through October.
